Banana Walnut Cake with Chocolate Glaze is an extremely moist, tender cake with the perfectly harmonized flavors of banana, walnut and chocolate.

I knew when I started mixing this cake that it was going to be soft and very moist. I knew that by the look of the batter. It was so fluffy and light when I started mixing the butter and sugar together that I just knew it was going to be good Even as I added the dry ingredients alternately with the buttermilk it kept it’s fluffy light texture. I was excited, I couldn’t wait to see it baked.

My cake was done at 40 minutes instead of 45 to 50 minutes, it could’ve been my oven but just to be safe ,check it at 35 minutes with a toothpick. When I took it out of the oven I could see how soft it was, I love cakes like this. I was a little surprised that the recipe only called for one banana. But it became evident after my first taste that the banana isn’t meant to over power the other flavors in and on the cake. It is one component of a flavor combination that melds beautifully together.

Your taste buds get a taste of banana, walnut and chocolate that is perfect. Not one of the three over powers the other, it becomes it’s own flavor. This perfectly harmonized flavor is nestled in a soft, tender ,moist cake. Perfection ! I had small very ripe bananas, I used two small bananas to make one large banana for the recipe. The riper the banana the more banana flavor you’ll get. When the recipe says to beat the butter and sugar for 4 minutes, beat it for 4 minutes. Make this cake exactly as the recipe directions state and you’ll be rewarded with a wonderful cake. And remember, only mix dry and wet ingredients into the batter until they are JUST incorporated to have a tender light cake, that can be applied to all cake recipes. Banana Walnut Cake Ingredients:

  • 2 cups all purpose flour
  • 1 1/4 Teaspoons baking soda
  • 1 Teaspoon salt
  • 1 cup (2 sticks) butter, room temperature
  • 1 1/2 cups white sugar
  • 2 eggs, room temperature
  • 1 ripe banana, mashed
  • 1 Teaspoon vanilla extract
  • 1 1/3 cups buttermilk, room temperature
  • 2/3 cup finely chopped black walnuts

We start this delicious cake recipe by preheating the oven to 350 degrees and buttering and flouring a bundt pan. Combine the flour, baking soda and salt in a medium bowl, whisk the ingredients together to combine them. Place the butter and sugar in a large bowl and beat with an electric mixer for four minutes until it’s light and fluffy. Add the eggs to the bowl one at a time, beating well after each addition. Beat in the mashed bananas and vanilla. The next step in the recipe is adding the flour and buttermilk to the batter alternately. Always start with the flour and end with the flour.

We start adding the flour and buttermilk alternately to the batter by adding a portion of the flour first and beating until it’s just incorporated. Next add a portion of the buttermilk to the batter beating until just incorporated. You’re going to continue adding the remaining flour and the buttermilk alternately until both have been beaten into the batter. Remember to only beat each ingredient into the bowl until it’s just incorporated. The longer you beat the more gluten you produce and the tougher the cake will be.Pour the batter into your prepared bundt pan and bake for 45 – 50 minutes. Let the cake cool in the pan on a wire rack for 10 minutes. Remove the pan, let the cake cool completely.

Chocolate Glaze Ingredients:

  • 1 1/2 cups powdered sugar
  • 8 Tablespoons unsweetened cocoa powder
  • 3 Tablespoons milk
  • 2 Teaspoons vanilla extract

Place the powdered sugar and cocoa in a medium bowl. whisk the powdered sugar and cocoa together until well incorporated. Slowly stir in the milk and vanilla. Whisk until the ingredients are smooth. You can add a bit more milk to the glaze if need be to thin the glaze. Pour the glaze over the cooled cake.

Ingredients

Cake Batter ingredients:

  • 2 cups flour
  • 1 1/4 Teaspoons baking soda

Chocolate Glaze Ingredients:

  • 1 1/2 cups powdered sugar
  • 8 Tablespoons unsweetened cocoa powder
  • 3 Tablespoons milk
  • 2 Teaspoons vanilla extract

Instructions

  • Preheat your oven to 350 degrees. Generously butter and flour a 10 inch tube pan or bundt pan.

For the cake batter:

    Combine the flour, baking soda and salt in a medium bowl, whisk or stir to combine.

    • Place the butter and sugar in a large bowl. Beat with an electric mixer until well combined (about 4 minutes). Add the eggs one at time beating well after each egg is added to the bowl. Beat in the mashed bananas and vanilla .

      Add the flour and buttermilk alternately to the bowl beginning and ending with the flour.Beat each addition of flour and buttermilk into the batter until it's just incorporated.

      Example for adding the flour and buttermilk alternately to the batter - All together it's going to look like this - add 1/2 cup flour and beat until just incorporated - Add 1/2 cup buttermilk beat until just incorporated - 1/2 cup flour, beat until just incorporated - 1/2 cup buttermilk beat until just incorporated, 1/2 cup flour beat until just incorporated, 1/3 cup buttermilk beat until just incorporated, 1/2 cup flour, beat until just incorporated. Always begin and end with the flour. Beat each addition of flour and buttermilk into the batter until it's just incorporated. After the flour and buttermilk have been added to the batter, fold in the walnuts.

      Pour the batter into prepared bundt pan and smooth the top. Bake at 45 -50 minutes. Let cool in pan on wire rack 10 minutes. Remove from the pan to a serving plate. Let cool completely.

    Chocolate Glaze:

    • Whisk the powdered sugar and cocoa together in a medium bowl. Slowly stir in the milk and vanilla. Whisk until smooth. Add a bit more milk to thin the glaze if needed. Spread over cake.

    It sounds very good. You put black walnuts in the cake but the outside looks like English walnuts.
